Steps
Sequence Step
1Preheat oven @ 450F.
2Toss leeks in roastin pan with 1/3 cup olive oil, season with salt. Roast until slightly golden, approx 30 minutes
3Place salmon in shallow pan and rub with remaining oil. Set aside to allow coming to room temperature
4When leeks are done, reduce oven to 275F. Season salmon with salt, place over leeks and brush with oil in pan. Roast until firm, 30-40 minutes.
5Pulse shallot in food processor until minced. Add butter, chives, tarrogon, parsley, lemon juice and salt to taste and pulse until combined.
