Thinly slice sirloin. Coat with salt and pepper.

Heat oil in pan, adding sirloin. Brown, over moderately high heat for about 3-4 minutes.

Place onions in pan, salt and pepper, and let cook about 5 minutes. Add mushrooms, and cook for another 5 minutes. Add Thyme and Garlic, stir.

Add beef stock and simmer for approx 15 minutes. Can thicken if desired. Serve in bread bowls or for low-carb, soup bowls. Top with cheese
