Char onions and peppers, if desired. When cool enough to handle, remove ends and seeds of peppers.

Place everything in a pot with just enough water to cover. Bring to a boil and simmer for 15 minutes to soften veggies.

When peppers are soft, transfer ingredients to blender and blend until smooth.

Strain, if desired.

Return blended sauce to sauce pan (can add 2 TBSP oil before adding sauce if desired), and simmer to desired consistency.
