In a food processor, combine toms, 1/4 onion, spinach, pepper, salt, garlic, and cilantro. Blend till chunky.

Chop and saute zuccini and remaining onion with a dash of seasoned salt. Set aside.

Beat 4 extra large egg whites and pour in skillet, season to taste with black pepper and salt, let cook for 3 min on med heat. Pour in zuccini and onion, fold over and continue to cook till done.
