I love slaw but have been wanting to get away from the heavy mayonnaise based recipes. This Greek style slaw is light and great for a low carb or keto diet
Shred Cabbage into a large bowl. Clean and chop green onions and add to the bowl. Add 1-6 ounce container of feta cheese (flavor to your liking, garlic and herb is great; plain is also delicious). I use the reduced fat. In a 2 cup mixing cup combine oil, vinegar, salt and pepper. Mix with a whisk until emulsified. Pour over the slaw mixture, mix well and refrigerate at least 4 hours. It''s a great addition to chicken kebobs, or any sandwich!
