Combine 3 cups water in a skillet with all ingredients except corn starch and cheeses. Simmer until noodles are tender. Add additional water as needed. Mix corn starch with 1/2 cup water and stir in. Add cheeses and stir until melted. Season with salt, pepper, and hot sauce as desired
