1Clean and chop 1 med. head of cauliflower, cutting into small florets (6 cups)
2Pit and chop 10 medjool dates into 1/4 inch pieces (about 1 cup)
3Chop 1 cup of pecans (or walnuts)
4Make dressing with 1 cup of sour cream, 1/2 of fresh lemon, and maple syrup. Add salt to taste.
5Mix the salad. When serving, chiffonade a fresh mint leaf to sprinkle on top.
