Bring 1/2 cup ample syrup and water to the boiling point in a saucepan.

Remove from heat and stir in brown sugar until completely dissolved.

Cook, covered on high heat for 2-3 minutes or until steam washes the sugar crystals from the side of the pan.

Cook uncovered until temp reaches 300-310 degrees on a candy thermometer, hard-crack stage, stirring constantly.

Stir in the butter, additional maple syrup extract or flavoring, walnuts, and baking soda.

Spread into a thin layer on a buttered baking sheet and cool completely. Break into pieces and serve.
