Using a tablespoon, scoop a portion of dough and roll it between your palms into a 1" ball. Place on baking sheet and mash flat in a crisscross pattern using a fork. Dough should be approximately 1/4" thick. Repeat with the remainder of the dough leaving 1 inch between flattened cookies.

Bake 15 minutes.

Remove cookies from baking sheet and allow to cool thoroughly on a rack.
