Mix all dry igredients together including nuts. stir in the grated carrots and apples.

In a seperate small bowl mix liquid ingredients including egg replacer with 4 Tbs of water.

Mix the wet ingredients into the dry ingredients just until evenly moistened

Using a small scooper, place one scoop in each muffin tray which has been sprayed with coconut oi.

Bake at 350 for 20 minutes.
