Preheat oven to 375 degrees and spray oil into twelve 2 1/2 inch muffin tins. Set muffin tin aside.

In one bowl add all dry ingredients- oats, flour, baking powder, sugar and salt. Whisk to combine. Make well in the middle.

In another bowl mash bananas and add Orange juice and vanilla.

Add wet ingredients to dry all at once. Mix until combined.

Fill muffin wells 2/3 way up with batter. Place in center rack of oven. Bake for 20 minutes or until light brown.

Let muffins cool in tin on wire rack for 5 minutes. Then either, serve then warm or let cool completely on rack then put into air tight container.
