boil water in heavy saucepan over high heat, when boiling add salt and lower heat to med. whisk in cornmeal in a slow steady stream. whisk until no lumps are present and it boils. Continue to simmer, for 1-2 min until it thickens.

reduce heat to barest simmer, cover pot and stir every 10min or so with a wooden spoon. cook approx. 35-40 min. until raw flavor disappears. Stir in butter and add more salt to taste if necessary. serve immediately.
