A great way to use up garden bounty from you zucchini plants. Very much like potato pancakes with just enough batter to hold the shreads together.

Mix all ingridients together in a bowl. Preheat griddle or frying pan and coat with cooking spray. You need to recoat the pan after each batch.

Preheat oven to 200 degrees

ladel batter onto heated griddle by 1/3 cupfuls and flatten slightly with a spatula.

cook pancakes 4 minutes on each side being careful not to burn them.

Place cooked pancakes in preheated oven to keep warm and repeat steps 3 and 4 until all of the batter is used up.
