One of my favorite comfort foods. I sort of decided one day to make a easy potato soup. So this is the results.

Pour water into Dutch oven over medium heat. Add diced potatoes and Chives and cover. Cook about 15 minutes over low heat. (Watch for boil over.)

Cook sausage and drain. Then add to potatoes.

Add pouch of instant potatoes and milk. Simmer until desired thickness. Stir occasional.

Can be transferred to a crockpot after the potatoes have cooked for 15 minutes. Simmer until ready to eat.
