Heat butter and oil in skillet

flour the fish on both sides and season with salt and pepper

fry fish in skillet for at least 5 minutes per side, depending on thickness of fish; remove from the pan and keep warm

In same skillet, add the onion, tomatoes and peppers; saute for 3 minutes.

Add the fish sauce and continue cooking for 3 minutes.

Adjust seasonings to taste.

Combine cornstarch with a little cold water to thicken; add to skillet. Once liquid comes to a boil, pour it immediately over the fish and serve.
