Break the eggs into a mixing bowl. Add egg whites and beat until smooth.

Add diced onions, red pepper, parsley, broccoli florets, green olives, salt and pepper. Mix thoroughly.

Divide mixture into 12 medium sized, greased muffin tins and back at 400 degrees for 25 minutes.

Remove from oven and cool.
