Place Apricots in 2 quart pot

Fill the pot with water until the apricots are covered by about an inch of water

Bring to a boil; than simmer

While its simmering take mashing tool and continue to mash apricots until they are a smooth loose paste

Let apricot filling cool to room temperature

Blend Cream Cheese and margarine in mixer

Slowly add 2 cups of flour until dough forms ball and is not stick

Preheat oven to 350 degrees

Lightly coat cookie tray with margine

Lightly coat a flat surface area with flour

Take a fist size poriton of dough and roll flat (slightly less than a pie crust.)

Cut dough into squares

Add a spoonful of apricots to each square

Fold the square into a roll

Place cookies on tray ½ inch apart

Bake for 30 minutes

Storage: Cookies should be stores in an Open container. If stored in an airtight container the cookies will become to moist and mushy.
