Add dry ingredients into large bowl and mix until it forms a dough. Shape into balls smaller than a walnut. Place on an a cookie tray lined with parchment paper 2 inches apart and flatten with a moist fork or finger tips.

Bake 6 - 10 minutes or until edges are slightly browned.
Makes 4 dozen 1.5 inch cookies.

Alternatives:
Can make as vanilla wafers by using 2 tsp vanilla powder.
Chocolate add 1/3 cup cocoa powder
Snickerdoodle by adding 2 tsp vanilla and 1 tbsp cinnamon

Can use all purpose gluten free flour in place of garbanzo bean flour. Can use either roasted white corn flour or white corn flour, roasted is especially good with the cardamom and lemon zest.
