Preheat oven to 350 degrees.

PureƩ all ingredients (except beef and mustard) until smooth, then mix in mustard.

Spread an 1/8 inch layer of puree on steak leaving a 1/2 inch boarder on the edges.

Roll tightly and tie with butcher twine.

Place in roasting pan and season with salt and pepper.

Roast until the internal temperature reaches 140 degrees, about 40 minutes.

Let rest about 10 minutes. Remove twine and slice.
