cupRicotta Cheese, part skim

tablespoonwhole-grain Dijon mustard

Steps
Sequence Step
1Preheat oven to 350 degrees.
2PureƩ all ingredients (except beef and mustard) until smooth, then mix in mustard.
3Spread an 1/8 inch layer of puree on steak leaving a 1/2 inch boarder on the edges.
4Roll tightly and tie with butcher twine.
5Place in roasting pan and season with salt and pepper.
6Roast until the internal temperature reaches 140 degrees, about 40 minutes.
7Let rest about 10 minutes. Remove twine and slice.
