Preheat the oven to 400° F.

Blend flour, sugar, salt and zest in a food processor.

Add butter and blend until the mixture becomes grainy.

Add the yolk and then water and blend until clumps form.

Form into a ball, wrap in plastic, and flatten into a disk.

Refrigerate for at least 30 minutes.

Increase the oven to 450°.

Roll dough into 2 12" circles.

Fold up the edges and pinch into a 1/2” lip.

Brush shell with egg.

Crumble cheese into each shell.

Bake for 30 minutes.

Cool slightly and pour chopped nuts into the shells.

Top with pears and avocado in an alternating spiral pattern.
