Steps
Sequence Step
1Preheat the oven to 400° F.
2Blend flour, sugar, salt and zest in a food processor.
3Add butter and blend until the mixture becomes grainy.
4Add the yolk and then water and blend until clumps form.
5Form into a ball, wrap in plastic, and flatten into a disk.
6Refrigerate for at least 30 minutes.
7Increase the oven to 450°.
8Roll dough into 2 12" circles.
9Fold up the edges and pinch into a 1/2” lip.
10Brush shell with egg.
11Crumble cheese into each shell.
12Bake for 30 minutes.
13Cool slightly and pour chopped nuts into the shells.
14Top with pears and avocado in an alternating spiral pattern.
15Quarter and serve.
