Combine tomato and lime juice.

Add celery seed, horseradish, brine, worcester and salt.

Process in an ice cream maker.

Add chopped olives. Freeze.

Preheat oven to 350 degrees.

Grate cheddar cheese.

Put wax paper on baking sheet.

Form 6 3” circles in a wheel pattern with the cheese.

Melt in oven about 5 minutes then partially cool.

Lift cheese wheels and place over upside down shot glass. Refridgerate.

Scoop sorbet into cheese cups. Insert 2 celery stick into sorbet to form an “X”
