Preheat oven to 350. Spray 9x5 loaf pan with cooking spray.
Place bread cubes in large bowl. In smaller bowl, combine 1/2 cup soy milk with 3 tbsp cornstarch (or arrowroot). Whisk until smooth. Add remaining 1.5 cups soy milk, syrup, vanilla, cinnamon and nutmeg, and stir to combine. Pour over bread cubes, and stir until all bread is wet. Allow to sit for 15 minutes or overnight.
Slice bananas and add to bread, along with chocolate chips. Stir gently with spatula until well combined. Pour mixture into loaf pan, smoothing out top.
Bake for 25-35 minutes, or until top is lightly browned.
