Preheat oven to 350 degrees F. Combine zucchini, carrot,s sugar, juice, oil, eggs, and vanilla. Mix well. In a separate bowl combine all dry ingredients. Mix dry ingredients with wet; do not over mix. Bake for approximately 40 to 50 minutes, or until tester inserted in center comes out clean. Cool in pan on rack for 20 min, then remove from pan and cool completely.
