1Stir well, to combine all ingredients with 1/3 c. club soda or diet ginger ale, and 1/4 t. salt. Do not over stir. Bake in a preheated oven at 375* for approximately 20-25 minutes or until a tooth pick comes out clean when inserted. SUGGESTIONS: *You may use a Splenda Sweetener OR I like Truvia better. ** If you want, you can use 1c.Frozen Unsweetened Blueberries. (Yes, 1c. vs. 1/2c. of dried -because you need more berries if they''re fresh-frozen) That change will cut the calories down a bit, and reduce added sugar (from the dried blueberries). Also if using fresh FROZEN Berries, delete the seltzer water as frozen berries have a lot of water in them. If you do not, your batter will be too thin and will not bake right.
