1Press zucchini between paper towels to remove excess moisture. Combine zucchini, flour, & next 4 ingr. in a large bowl.
2Combine orange joice, eggs, oil, & orange extract, stirring well. Add to dry ingr, stirring just until dry ingr are moistened.
3Spoon batter into an "8 1/2 x 4-1/2 x 3" loaf pan coated with cooking spray. Bake at 375 degrees for 45 minutes or until a wooden pick inseted in center comes out clean.
4Let cool in pan 10 minuites, remove from pan and let cool completely on a rack
