| 1 | Press zucchini between paper towels to remove excess moisture. Combine zucchini, flour, & next 4 ingr. in a large bowl. | 2 | Combine orange joice, eggs, oil, & orange extract, stirring well. Add to dry ingr, stirring just until dry ingr are moistened. | 3 | Spoon batter into an "8 1/2 x 4-1/2 x 3" loaf pan coated with cooking spray.
