In a separate bowl, mix beat the eggs and mix with the buttermilk.

Add to mix and stir. Add fruit if desired.

Heat frying pan over medium heat and grease surface with 1 tbsp butter, oil or olive oil spray. Ladle onto the surface to form 4-inch pancakes. Once they start to bubble, flip and cook for another 2 – 3 minutes.
