Lightly spray omelet pan with olive oil spray and heat over medium heat. Toss in the spinach for two to three minutes. Remove from heat. Cover and keep warm. Pour in the egg whites and sprinkle in salt and pepper.

In a medium bowl, wisk egg whites and add salt and pepper. Lightly spray nonstick skillet. Pour into pan. Swirl around to ensure it covers the bottom of the pan. Using a rubber spatula, fold (don’t stir) egg whites as they start to solidify.

Once eggs are cooked through, add spinach and feta to one side only. Fold the plain side over the spinach and feta side. Cook for another minute.
