Heat oven to 350. Combine flour, brown sugar, salt, baking soda and cinnamon. Add buttermilk and vanilla and mix. Pour into oiled 12x16 flat baking pan and spread evenly. Bake 20 to 25 minutes. Loosen hot patty from pan. Allow to cool completely.

Heat oven to 275. Break patty into chunks and pulse in food processor to coarse crumbs. Divide between 2 12x16 pans. Bake for 30 minutes, stirring every 10 minutes.
