Sift together flour, salt and baking powder in a large bowl. Make a well. Set aside

Melt the shortening. Add melted shortening and (hot) water to the flour mixture. Mix together with your hands. When well combined, let stand for 20 minutes.

When done resting, knead the dough on a floured surface for a minute or two. Tear off dough the size of a ping pong ball. On a foured surface with a floured rolling pin, roll the dough out to make a 6" tortilla.

Cook tortillas on a very lightly oiled griddle over medium heat for 45 seconds on each side or until no longer doughy. When done cooking place in between a dish towel on a plate. This will keep them nice and pliable and soft.
