Preheat oven to 375 degrees. Put muffin liners in muffin pan.

Mix together wheat bran with soured skim milk (1 cup skim milk ,1 tblsp vinegar or lemon juice);let stand for 10 min.

Beat together oil,egg,sugar and vanilla to soured milk/bran mixture. Sift together flour,baking soda, baking powder and salt. Stir flour mixture into soured milk mixture just util blended. Fold in apples and spoon batter into prepared muffin tins.

Bake for 15-20 min(my oven 15 min) or until a toothpick inserted into the center of the muffin comes clean. Cool and enjoy!
