Combine flours, baking powder, cinnamon, ginger, and nutmeg. Set aside.

In a separate bowl combine pumpkin, vanilla, brown sugar, egg beaters, and melted coconut oil.

Stir in remaining ingredients in and add the dry ingredients. Mix until well blended.

Drop by tablespoonfuls onto a slightly sprayed cookie sheet. Bake for 10 - 12 minutes or until firm and slightly browned.
