1In a large stock pan, soften onions and bell peppers in olive oil. Add garlic, potatoes, carrots and seasonings to taste. Stir well. Add lentils and stock/water covering ingredients plus 2", bring to a boil. Reduce heat to simmer until lentils and potatoes are soft but not mushy.
