Steps
Sequence Step
1Peel, seed, and chop 2 cucumbers.
2Cook the chopped scallions in the margarine until soft.
3Add the chopped cucumbers and the wine vinegar.
4Pour in the broth, and stir in the farina.
5Salt to taste, and add tarragon (or dill).
6Let the soup simmer for 20 minutes, or until the cucumbers are soft.
7Put the soup into a blender, and puree it.
8Pour the puree into a bowl, and whisk in the sour cream.
9Taste the soup for seasoning.
10Pour the soup into bowls, and garnish with cucumber slices and chopped parsley.
