In food processor, mix flours and salt. Add shortening and lard and blend into mix thoroughly, no large pieces of fat. Add hot water to processor as it is running. Let run until a ball forms.

Divide dough into 12 balls and let rest for 30 minutes

roll out into circles on lightly floured board

Heat griddle until very hot. Lay tortilla on griddle. It should sizzle. 30 to 45 seconds flip to other side for about same time. Adjust heat so that brown spots do not burn.
