Chop vegetables. Preheat oven to 400 F. Bring 1 cup water to a boil in a pot with bouillon cube.

Peel garlic, lightly coat in olive oil and bake 20 mins. Meanwhile add barley and potato to pot, let cook 10 mins.

Add broccoli, artichokes, and grated zucchini to pot. Flavour with salt and pepper.

Remove garlic from oven, mash and add to pot. Stir ingredients vigorously to mash potato into the soup. Let cook a few minutes more, then add yogurt. Cover for a few more minutes then serve.
