cupcoconut flakes, unsweetened, unsulphured, Bobs Red Mill

tablespoonsolive oil, extra virgin for "frying"
Steps
Sequence Step
1Rinse shrimp under cool water and dry.
2Place flour on a large plate.
3Beat the egg with 2 tsp. water and pour onto another plate.
4On a third plate, pour the coconut.
5Heat the oil in a deep heavy pot until a thermometer reads 365 degrees.
6Dredge the shrimp with the flour.
7Holding the shrimp by the tail, dip the flesh into the beaten egg and then coconut.
8Line a baking sheet with paper towels and put a mesh cooling rack over it.
9When the oil is hot, fry one third of the shrimp at a time. they should take about two minutes.
10Remove shrimp with a slotted spoon and transfer to the cooling rack.
