| 1 | Saute garlic, crushed red pepper and olive oil over medium-low heat with a dash of kosher salt until fragrant. | 2 | Meanwhile, chop onions and green and red peppers. Add to the pot and toss until the veggies are covered in the olive oil. Raise heat to medium and cook uncovered for 10 minutes, stirring frequently, until onions are translucent. | 3 | Drain the liquid from the two cans of tomato. Add to the pot with the veggies.
