Cut up the cauliflower into florets and place on baking sheet. Salt and pepper the florets.

Roast the cauliflower for 20 minutes, turning halfway, at 450 degrees.

Stove top, melt butter and roast pine nuts until golden brown. Add garlic and cook for a few minutes. Add dates.

Toss roasted cauliflower with butter mixture and serve warm.
