Take oil and put in dutch oven with carrots, onions and celery. Cook until soft.

Add chicken broth, tomatoes, beans, tofu, garlic and thyme. Cook for 10 minutes.

Add spinach, green beans, salt and pepper. Cover and simmer 10 minutes or until vegetables are soft.
