Spray shallow Pyrex baking pan with non-stick spray.

Spread 16 ounces of frozen O''Brien potato mixture on the bottom of the pan like a crust.

Crack 12 eggs into a large bowl, mix in milk and beat well.

Add salt, pepper and dehydrated onions to the egg mixture and mix in.

Sprinkle ham and chopped sweet peppers over the potato mixture.

Pour egg mixture over the potatoes, ham and peppers.

Sprinkle parmesean cheese over the egg mixture.

Cover the pan with foil.

Bake at 350 degrees for 35-40 minutes. Remove foil and continue to bake for 10-20 minutes. Enjoy!
