Preheat Oven to 350 degrees and grease baking dish (Pam Spray)

Fry Bacon until Crisp (or use leftovers)

Quarter bread slices and scatter around baking dish

Slice tomato, chop spinach and bacon. Scatter over top of bread

Whisk eggs, yogurt, milk, dijon, and cheese. Salt and pepper to taste and pour everything over the bread. Make sure to cover everything

Bake 30-40 minutes until custard is set
