1If starting with corn meal insteal of pinole, toast it lightly in a pan over medium heat for about 5 minutes, until it is lightly browned and fragrant. If using pinole, grind in a coffee grinder to make a fine flour.
2Preheat waffle iron.
3Stir together cornmeal, chia, ground oats, salt and baking powder.
4In a separate bowl, mix together milk, yogurt, maple syrup, and vanilla.
5Stir the wet ingredients into the dry to combine into a smooth batter.
6Spray the waffle iron with nonstick spray and pour batter onto hot iron.
7Follow the waffle iron directions or wait until the steam stops.
