Preheat oven to 400 degrees F. Place 1 of the 2 Tablespoons of oil in a cast iron skillet and put the skillet into the oven to heat while you gather and combine all other ingredients. Combine the other 1 Tablespoon of oil and all other ingredients in a large bow. Mix just until evenly moist. Spoon into the hot cast iron skillet. Bake until a straw or toothpick inserted into the center comes out clean (about 20 minutes). Slice like a pie and serve while warm.
