Put chicken into the bottom of slow cooker and add all ingredients except stir-fry veggies. Stir to coat chicken evenly. Cover and cook on low for 5 hours, then add the frozen stir-fry vegetables. Re-cover and cook on high for 1 hour, or until the vegetables are heated through. Serve over white or brown rice.
