Brown ground turkey adding cumin, salt and pepper to taste, if you wish.

Combine 1 4 oz can of chopped green chiles, drained, with 4 laughing cow light swiss or herb cheese wedges.

Add beans and cheese mixture to turkey. Stir to combine and remove from heat.

Saute cabbage until tender.

Coat a 9 x 13 inch baking pan with oil spray. Lay out a tortilla. Put 1/6 of cabbage in center and 1/6 of turkey mixture on top. Repeat with remain tortillas and lay them, seam side down, in prepared pan.

Heat oven to 375.

Cover Enchiladas with one 10 oz can of red or green enchilada sauce. Sprinkle with cheddar cheese and bake for 30 minutes or until lightly browned and heated through.
