This is an old family recipe. Very delicious, unfortunately, not low in calories! If you're not sure when you'll get lunch, this is a great stick-to-ya breakfast!

Mix dry ingredients.

Add egg, oil, buttermilk (or soured milk--add 2tbsp vinegar to milk).

Stir well. Check for consistency. Batter should be slightly thin.

Cook on hot griddle (reasonable oil). Cakes should be crispy on edges and served with butter/syrup.

Cold Corn Cakes can be eaten later with jam! YUM!
