1Lay tortilla flat spread out on plate.
2In a small bowl, mix smashed avocado, sliced onions, and hummus together with a spoon.
3Then spoon the avocado mixture onto the flour tortilla and lay a bed of spinach onto the mixture, and top it off with the white beans and the sliced tofu.
4Fold over the opposite ends over onto itself and roll the tortilla towards you and serve cold, with a recommended side of vegetable chips.
