This is a low fat, reduced sugar variation on seven minute frosting. This recipe uses instant pudding mix to introduce flavor and texture which reduces the amount of sugar and number of egg whites needed to produce a delicious and stable seven minute style frosting. The end result is versatile enough to be used for fillings, toppings or frosting and decorating a cake.

Place egg whites and cream of tartar in a large heatproof mixing bowl. Set over a saucepan of simmering water (Do Not Allow Bottom Of Mixing Bowl To Touch Surface Of The Water). Gently whisk until cream of tartar is dissolved and egg whites are warm to touch. 2-4 minutes

Remove from heat then beat eggs with electric mixer, starting on low speed setting, gradually increasing to high. Beat egg mixture to soft peak stage, 2-3 minutes.

Add both packages Instant No Fat Pudding Mix to egg mixture. Using mixer on low blend in pudding mix then increase speed to high. Continue mixing until stiff peaks stage, 3-6 minutes.

Pipe or spread onto cupcakes, use it for filling or topping. Lick the beaters, or maybe eat it straight from the mixing bowl.
