1crisp bacon
2add butter, melt
3add onion, leek, carrot and garlic. cook about 5 minutes
4stir in flour
5slowly stir in chicken stock
6add potatoes, bring to boil
7reduce heat, cook 15 minutes or until potatoes are soft
8remove about 2 cups soup mixture, add to large mixing bowl with shredded cheese, mix until smooth
9add cheese to soup
10add salt and pepper
