Combine all dry ingredients well.

Add all dried fruit, coconut and nuts. Mix well.

Beat together eggs, oil and vanilla.

Add egg/vanilla/oil mix to dry ingredients and mix well.

Fold in apples.

Pour batter into muffin pans sprayed with Pam, filling 2/3 full.

Bake at 375 degrees F for 20-25 min.

Can substitute any dried fruits and nuts with what you have on hand keeping amounts the same. Ideas include dried currants, dates, almonds, etc.
