Steps
Sequence Step
1Combine all dry ingredients well.
2Add all dried fruit, coconut and nuts. Mix well.
3Beat together eggs, oil and vanilla.
4Add egg/vanilla/oil mix to dry ingredients and mix well.
5Fold in apples.
6Pour batter into muffin pans sprayed with Pam, filling 2/3 full.
7Bake at 375 degrees F for 20-25 min.
8Can substitute any dried fruits and nuts with what you have on hand keeping amounts the same. Ideas include dried currants, dates, almonds, etc.
